Poached pears

Preparation time: 10 minutes

Cooking time: 15 minutes

Serves: 6

Storage: Covered in the fridge, not suitable for freezing


  • 2 cups (500mL) red wine
  • 1 cup water
  • 1/3 cup caster sugar
  • 6 pears, peeled and quartered with cores removed
  • Reduced-fat custard, or homemade with:
  • 2 tablespoons (40g) custard powder
  • 1 tablespoon (20g) castor sugar
  • 2 cups skimmed milk


  1. Put the wine, water and sugar into a large saucepan and bring to the boil
  2. Lower the heat, add the pears and simmer for 10 to 15 minutes, turning occasionally until tender
  3. Heat custard in the microwave, or make it by mixing a little milk with the custard powder and sugar to make a smooth paste, then whisking in the remaining milk
  4. Cook in the microwave for around 2 minutes, stirring after one minute
  5. Allow to stand for a few minutes to thicken
  6. Remove the pears from the heat and allow to cool in the syrup
  7. Serve warm or cold, with syrup and custard

Note: Any variety of wine is appropriate for this recipe.
