Chocolate self-saucing pudding (low fat)

Serves: 6

This recipe is not what you would call ‘healthy’, but it is low in saturated fat and kilojoules when compared to standard chocolate desserts. It makes a good alternative to rich desserts at a dinner party.

Ingredients for sponge

  • 1 cup self raising flour
  • 1/3 cupsugar
  • 1 tablespoon cocoa
  • 2/3 cup skimmed milk
  • 2 tablespoons margarine, melted

Ingredients for sauce

  • 2 tablespoons cocoa
  • 3/4 cup brown sugar
  • 1 1/4 cups boiling water


  1. Preheat oven to 180°C(160°C fan forced)
  2. Put all pudding ingredients in a bowl and mix gently until combined
  3. Put the sauce ingredients into a 2 litre (8 cup) capacity ovenproof dish and stir well
  4. Pour the pudding batter gently over the sauce, in the centre of the dish (during the cooking the batter will spread out evenly)
  5. Bake for 40 minutes, or until a knife comes out clean when inserted into the pudding (not through to the sauce at the bottom)
  6. Serve with a small scoop of low-fat ice cream
